COTTAGE PIE

 

 

Ingredients

 

  • 500g minced beef
  • 1 onion
  • garlic (2 Tsp)
  • 2 tbsp tomato purée
  • 400g chopped tomatoes (1x tin)
  • 2 carrots
  • 300ml beef stock
  • Worcestershire sauce (just a dash)optional
  • 1 tsp mixed dried herbs
  • black pepper (to taste)

For the topping

  • 1kg potatoes (for mashing)
  • 2 tsp mustard (optional)
  • 75g unsalted butter
  • 4 tbsp milk
  • black pepper (to taste)

 

Method

  1. Preheat the oven to 190'C/Gas mark 5
  2. Heat the oil in a large frying pan over medium high heat
  3. Add the onion, garlic and carrot and cook over a medium heat until soft
  4. Add the mince and cook to brown
  5. Add the tinned tomatoes, tomato purée, beef stock, mixed herbs and Worcestershire sauce - season to taste with salt and pepper
  6. Cover and simmer for 30 minutes
  7. Meanwhile, boil the potatoes in water until soft
  8. Drain and mash with the mustard (if using), butter and milk - make sure you keep the mash quite firm
  9. Spoon the mince mixture into a casserole dish

10.Top with the mashed potato, bake for 30 minutes until golden brown
